Ecchi is not my genre, but if you want me to watch one, which would it be?
Seriously, where are all the ecchi animes lately? Is it just a thing of the past? Perhaps a big influence from the west…

They’re still around, just gotta look for em.
Konosuba or Highschool of the Dead
It would have to be The 100 Girlfriends Who Really Really Really Really REALLY Love You. Excellent writing, excellent character designs. You start out jealous of Rentarou, and then by the end of Season 2 you just wish you were dating him too.
Maybe try High School DxD and Shimoneta
Kill la Kill.
Food Wars
The food was super sexy.
I guess people’s clothes did typically explode off them when they tasted the food …
Yuru Yuri!
How Heavy Are the Dumbbells You Lift?
It is more of an educational, CGDCT sports anime than ecchi IMO (but the ecchi moments are definitely there).

I find some of the stuff listed here is borderline not ecchi. I might risk some criticism here, but for me ecchi needs to have some aspect of sexuality as a core theme, not just coincidentally have thrown in a bit too much fan service.
If you want to try something a bit more risqué, then Interspecies Reviewers is definitely one of the better ones. Also, Gushing Over Magical Girls was quite decent as well.
