I cannot remember the title off the top of my head but I remember reading about at least one manga that changed the magazine it was serialised in to reach a different audience segment.

Disagree. I found it useful.
After watching a substantial amount of anime, I noticed - based on my AniList stats - that I enjoy seinen anime more than those of shounen and shoujo. (You can guess which demographic I am a part of.)
This made it easier for me to seek out anime that fit my taste - though it certainly is a self-reinforcing loop.
I’d still check shounen / shoujo anime out; they simply have a higher bar to clear.

the target audience for these series is almost always either boys or men
It makes sense once one think about it. Straight dudes would rather look at girls, and vice versa.

If people think …, they need to watch more media
AFAIK the target demographics are determined not by the eventual audience, but by the publishers. So if they think it would appeal to shounen, it gets classified as shounen.
think Frieren’s most important parts are the fights
Personally, I can see why Frieren gets classified as shounen even after discounting the fight scenes. I find that the characters’ thinking lack a certain depth / maturity / dimensionality of seinen and josei anime.

That was anti-climatic. There was no plot twist of any sort.
At least my backup guess turned out to be right. Oh, plus a prediction from a while back. These tropes all pan out the same way…
I hope things are not as simple as Lisa is making it out to be. They still haven’t shown us the witch’s motivations. It still looked as if the king wronged the witch in past, from my POV at least.
Lastly, I’m so glad this anime is taking the yuri route, unlike
mecha anime title starting with the letter 'G'
I wonder what happily-ever-after would mean for an interspecies lesbian couple though.

This prince is fucking useless. It’s your own mother who’s in peril. Shouldn’t you be the first one to step up and draw the bow?!
The only character who may be more useless is the ever-absent emperor. I can understand his absence regarding the Reirin-Keigetsu fiasco, if he’s dealing with issues that are more pressing (i.e. national issues, duh). But now that his wife is dying, he better have a bloody good excuse.
Also, now that I think about it, the maidens / princesses and the prince are half-siblings, aren’t they? Since they should all share a common father: the emperor.
Why is Reirin the only one to call the crown prince nii-sama, but the maidens don’t? Maybe that’s why the prince turned out like that…🗿

IIRC she did. In fact, it was shown to us in this most recent episode, right before they revealed her cursed leg.
What I cannot remember is if there’s an earlier instance of her limp.

The Story of a Girl Who Can Read Minds appeared on MangaDex front page, and has a fun premise, so I gave it a shot.
It’s certainly entertaining, so I’ll be following it for now. Hopefully it will be able to keep the fun factor up.

I wonder what the upcoming plot twist would be.
Here’s a wild guess: the Lara whom we are following isn’t the same Lara from 200 years ago. She has the same appearance and memories, yes. But all we (and she herself) know about her are second-hand accounts from the witch and her “sister”. As to who / what she really is and how she came to be… hmmm. That’s where this conjecture falls apart.
I guess it would simply be the awakening of Lara’s father then
