Can’t go wrong with most Gundams.
Personally, I’d choose Vinland Saga.
Twelve Kingdoms, anilist.co/anime/153/juuni-kokuki
Fascinating isekai about the protagonist learning about the world order and what it takes to be royalty.
Ghost in the Shell: Stand Alone Complex.
An easy answer would be Code Geass.
A better answer: Pluto

It’s Legend of the Galactic Heroes and it’s not even close. I can’t watch it right now though; one of the main villains reminds me a lot of Trump and it’s too depressing.

LoGH is a masterpiece, completely uncontested in this space.
I see people mentioning Attack on Titan and Vinland Saga. Those are good shows. 86, Chi (Orb), and various Gundams are worth considering too, but none of these can compete with the sheer scale of Legend of the Galactic Heroes.
