It’s more commonly sold in England. Starsan was banned here for a while, and it’s still hard to get a hold of, hence chemsan. Chemipro oxy is what I have found in a brew shop here and seems to work well. I might go back to that

I used honey rather than sugar, I don’t remember the exact amount but it was somewhere around 25 to 30 g into between 4 and 5 liters.

I made a mistake typing this. The Strawberry Jam Wine isn’t using Voss Kveik. Rather it is wild fermented from a sourdough starter.

They had the advanced flair so I think they had been brewing for a while. Lots of people on that subreddit seem to be a bit obsessive or perfectionist.

Honestly lots of people are saying this and I am glad. I was told on the r/mead subreddit by a certain person that using water could lead to mold in the airlock. It’s reassuring to me that not everyone thinks this as I have personally never seen it so I think it’s quite rare.

Thanks for the input. I don’t use starsan but something called chemipro oxy which contains sodium carbonate peroxyhydrate. I think this stuff breaks down faster than starsan but I am not sure.

It’s drinkable right now but not perfect. Probably needs some aging. I was brewing in non-ideal conditions with large temperature fluctuations and sunlight because it was outside. I would also consider using a yeast designed for fruit wines or red wines. Mangrove Jacks have a couple yeasts for fruit wines you could try. I can say that it is very cheap to experiment with! Each jar costs only £1.15 (about $1.50 for the Americans) from Morrison’s supermarket which is common all over England.
