Blech. Tepache failure. It’s supposed to go for 3-5 days, but mine didn’t kick off for a bit. Day 6 & tastes good, but smells like a barn has gym feet. So weird. #homebrewing
Don’t ferment tepache dry. Treat it like a ginger soda.

Brown sugar at the start, mostly for fermentation. During tasting, nothing. It was still mildly sweet. The plan was to back sweeten with erythritol, but I dumped it.
