For a big fish, it’s how many parasite they have not if there’s one or not. When you’re a giant fish the number matters.
See, the parasite is killed by freezing, but you’re still eating dead parasite bodies. That’s what really gives fish it’s flavour. Fish is uniformly tasteless, but … parasites! Sorry, Big Fin, I had to expose the conspiracy.
When they farm fish, the purposefully infect the fish with parasites to give them a better flavor. /s
