I am generally unable to save changes to my posts made in /c’s that are hosted on other instances, like this one I just made to !coffee@lemmy.world
Anyone else having that problem?

Could you try setting the language of the post when you edit it? This was a problem a few months ago which I thought was fixed on the December update.
I also just enabled the “Undefined” language option in the instance settings to see if that helps.
