Hmm, tough one. I’m going to maximise replayability and this assumes all DLC too

Factorio
Balatro
FTL or Slay the Spire
Civ 6 or Cities Skylines

JRPGs can be annoying to play multiple times.

Civ 6 (or some other strategy game like Age of Empires) and Factorio are great choice for this though.
