You wouldn’t take a drug for a demographic you don’t fit into just to cover all your bases. These drugs are proven to be unhealthy for most demographics so don’t treat this like any other drug you wouldn’t think twice about.
They’re limiting the drug to the people that may need it and still having the drugs be actively developed for potentially more demographics in the future. Everyone should be glad that you aren’t allowed to take a drug that will hurt you just like any other drug that fits that description.

You know what’s also unhealthy for people, the infection this helps mitigate. I originally wrote out a long diatribe and was going to look for many citations for it, but realised I could sum it up much easier.
Vaccines are proven to reduce severity, especially in the vulnerable demographics mentioned, they also reduce transmission for everyone. COVID vaccine efficiency fades with time. As a member of said vulnerable group, any infection utterly sucks, even if vaccinated (although having had COVID 3x, the first was absolutely hell in comparison to post vaccination, natural or pharmaceutical). This not insignificant risk I have to accept on a daily basis. The risk to anybody of getting vaccinated is magnitudes less than the risk I have to accept. By taking this comparatively tiny risk on my behalf, you significantly reduce what I have to accept.
Argue what you will about forcing vaccines, but when it statistically poses less risk than the car drive to go and get it, I don’t think it’s unreasonable to allow people to opt-in if they so desire.
