I’m an American who grew up with an English Nan in a part of the country filled with Italian Nonnas.
My jealousy of their food compared to a roast that could not be more dry…. my other grandma was American and couldn’t cook either.
Luckily, my mom was self taught so good food at home.

This is common in a lot of island and desert populations, where their ancestors had to store fat to survive multiple famines and shortages. Modern diets are terrible and all, but like most things in life, there are a variety of factors at play here.
Finding the right number of calories is difficult - but for some folks, genetically, that number is way lower than others.
