I was in a similar position to you a week ago with a 6700k and a GTX 1080Ti. The CPU will absolutely be a bottleneck, it’s a quad core from 2015. I would upgrade the CPU first then depending on what games you play upgrade the GPU later.

Maybe No Man’s Sky? It has been updated a lot since it was released and fixed most of the issues.
