I legitimately love my amazfit bip. 45 day battery life on a 2 hour charge, it has a passive screen so you can keep it on all the time so you're not having to shake your wrist or press a button and you can use gadgetbridge open source software to use it without the xiomi software.

Does it have good, simple watchfaces? Most of the Amazfit watch faces seem busy and cluttered, which isn't what I'm looking for in one of these smartwatches

It has a number of watch faces, many of them are just straight digital or analog time pieces. This is the watch face I prefer using, because it shows the date and time nicely.
