One of the reasons I’m not interested in win 11 is MS pulling crap like this e.g. removing a local PC service and moving it into the cloud where you have to confirm letting them store the mail on their mail servers, and its not optional.

I don’t really care that much that it is on there but do not log into new outlook with your IMAP/POP accounts. Your plaintext password will be stored in the Microsoft cloud
Use Thunderbird or any other desktop mail client or just login via web.

Unfortunately there doesn’t seem to be a third-party email program with functioning gesture support. Trying to switch to Linux before Windows 10 is deprecated myself, but since my grandma uses a Surface Pro in tablet mode, I opted to just install an older version of the Mail and Calendar program on Windows to remove the redirect-to-outlook component, with Microsoft Store auto-updates disabled.
