Fan theory: Himmel cared so much about his own appearance because it’s how he wanted Frieren to remember him. Not as the bald grandpa, but as a young handsome boy.

It might just be the first sentence. He focuses on his appearance, so Frieren is more likely to remember what he looked like because it was part of his character traits.
