You can access hidden apps by searching for them in the app drawer. Afaik no way to add a gesture to an icon. Lawnchair is definitely not as customizable as the likes of Nova, its goal is to make the Pixel Launcher more usable with some commonly used customization features. That makes it significantly less bloated than other launchers, but it might be missing some things you’re used to.
