It’s the same as those water fountains at work that filter tap water. There are one or more few carbon or other filters (redundant unless your tap water is below EU standards) plus a chilling (and maybe heating) chamber with UV light. You notice the lack of chloride that dissipated as the water stood still, otherwise there is no real difference.
